Meat and Dough Together; Kaytaz Pastry – Discover Turkish Food

Kaytaz pastry, one of the most popular flavors of Antakya cuisine, is perfect for those who like to consume meat and pastry together. Kaytaz pastry, which is very similar to lahmacun with hazelnut in terms of appearance and taste, will soon become one of the favorites of local flavor lovers.

Materials of Kaytaz Pastry;

  • Half a pack of fresh yeast
  • 1 teaspoon of sugar
  • 1 teaspoon of warm milk
  • 2-3 cups of flour 3 tablespoons of olive oil
  • 3 tablespoons of butter
  • 1 teaspoon of salt

For Internal Mortar;

  • 300 grams ground beef
  • 3 medium onions
  • 1 tablespoon of chili paste
  • 1 tablespoon of pomegranate syrup
  • 1 teaspoon of salt
  • Half a teaspoon of black pepper

Preparation of Kaytaz Pastry;

  • Add sugar and yeast to the milk and mix it to dissolve. Then set it aside.
  • Take 2 glasses of flour in a mixing bowl and open the middle like a pool. Pour the yeast mixture into it.
  • Knead the dough by taking the flour little by little from the edges.
  • After the yeast and flour are well mixed, add the salt. Take the dough out on a floured counter.
  • If the dough is too runny, add the flour little by little to obtain a dough that does not stick to the hand and has the consistency of an earlobe.
  • Return the dough to the bowl, cover and set aside to ferment.
  • Chop the onions. Mix and knead with minced meat, spices, tomato paste and pomegranate syrup.
  • Set the oven to 180 degrees and start heating. Melt the butter, add the olive oil and mix.
  • Divide the dough into 10 equal parts. Pour 1 tablespoon of oil mixture onto the counter. Put one of the meringues on it.

  • Flatten it by pressing it with your hand and apply oil on it again. Thin the meringue as much as possible with your hand or rolling pin.
  • Roll the dough into a roll and roll it like a rose pastry. Twist the free end underneath. Press lightly on it, put a generous amount of ground meat on it and press again.
  • Drop the minced meat between the dough layers. Do the same for all materials.
  • Place them on a greased baking tray and bake for 25-30 minutes.
