Another Flavor From Hatay’s Riches: Kabak Borani – Discover Turkish Food
There are many dishes that Hatay has brought from the civilizations it hosted to the present day. Today we are going to share one more of this delicious dish with you. You will be amazed by the taste of Kabak Borani, a wonderful recipe made with pumpkin.
Materials of Kabak Borani;
- 500 grams of pumpkin
- 200 grams medium-fat ground beef
- 50 grams of butter
- 3 tablespoons of oil
- 1 onion
- 4-5 sprigs of parsley
- 2 cloves of garlic
- 1 cup of strained yogurt
- Black pepper
Preparation of Kabak Borani;
- Chop the peeled pumpkin into 2 cm cubes. Cook for 20-25 minutes in boiling water with salt added.
- Put the oil and butter in the pan. When the oil is hot, fry the chopped onions and minced meat. Add salt and pepper. Continue frying for another 15 minutes on low heat.
- Whisk the strained yogurt and crushed garlic in a mortar in a bowl. Take the boiled and drained zucchini on a serving plate. Pour the garlic yogurt on top and then the ground beef mixture. Sprinkle with chopped parsley last and serve hot.
If you wish, you can decorate and sweeten with various spices. We recommend that you try to garnish the Kabak Borani with red pepper powder… Bon appetit!
