Flavor From the Capital: Ankara Pan – Discover Turkish Food
In fact, the Ankara Pan recipe is a kind of meat pilaf. White rice is replaced by barley vermicelli, which you are accustomed to seeing in soups in this recipe.
Other distinguishing features of Ankara Tava are; We can say that adding grated tomatoes and tomato paste to boiled red meat and broth. You can even add finely chopped green pepper and garlic to the Ankara Pan. It is a special dish that is frequently prepared during holidays in the Central Anatolia Region. As the name suggests, it is a special and popular dish of Ankara.
Moreover, Ankara Pan can be prepared with red meats such as shank without removing the bones, and you can even cook it in the oven on a heat-resistant baking tray.
Materials;
- 1.5 cups barley vermicelli
- 300-400 g coarsely minced meat
- Pepper (1 pc)
- Tomato (1 pc)
- Onion (1 pc)
- 1 clove of garlic
- Tomato and chili paste (1 teaspoon)
- 1 full spoon of butter
- 2-3 tablespoons of olive oil
- Salt
- black pepper
- Chili pepper
- Boiled broth
Preparation;
- Put the meat in the pot and add the water. When it boils, take the foam of the water and boil it for a few minutes, then add 3 glasses of water again and let it boil.
- Drain the cooked meat and set aside.
- Take the oil in the pan, add the meat and fry a little.
- Add the chopped onion and crushed garlic.
- Add the chopped pepper and tomato and fry a little. After the roasting process is finished, add the tomato paste and remove it from the stove when the smell is gone.
- Fry the barley vermicelli in olive oil until it changes color.
- Add the roasted meat to the barley vermicelli, pour enough water to cover it, discard the salt and let it cook.
- Add the spices to our cooked food without removing it from the stove, mix and let it rest. Enjoy your meal!
If you are going to make Ankara Pan with veal, you can boil the meat in a pressure cooker. For an aromatic taste, you can choose shallots instead of normal onions, and if you add a spoonful of vinegar to the broth, you can shorten the cooking time. Since Ankara Pan does not contain many spices, you can flavor it with spices such as mint and thyme.
