TasteAtlas website, which was founded by Croatian journalist Matija Babic in 2015 and included the evaluations of gastronomy experts, announced the “World’s Best Frozen Desserts” list on 31 May. See the list of 50 countries in total. What rank is Maraş ice cream?
Maraş Ice Cream took the 3rd place in the list. Iran’s saffron ice cream called ‘Bastani Sonnati’ was at the top of the list.
TasteAtlas website wrote the following about Maraş ice cream, which it took 3rd place;
“The name of Turkish ice cream is believed to come from the city of Maras. What really sets it apart from other varieties is its resistance to melting and its particularly dense, chewy texture. These qualities are achieved by adding two thickeners to the basic milk and sugar mixture: gum arabic, also known as gum rosin, and salep, a type of flour made from the root of the ancient purple orchid.
In fact, in the Kahramanmaraş region, ice cream typically contains significantly more salep than normal, so it is sometimes referred to as cut ice cream. This is why this type of ice cream is often eaten together.
