Another Dimension of Bread: Fodula – Discover Turkish Food

Fodula has reached from the rich menus of the Ottoman cuisine to the Turkish cuisine. Another name for fodula is stuffed bread. The name may be simple, but the look is a masterpiece!

The most important feature that distinguishes this meat dish, which also includes vegetables such as carrots and peas, from classical recipes is the flavors used. The use of anise and fennel, which we normally consume as tea, as flavoring makes this recipe very special. You can make a Fodula and serve it to your guests and get all the compliments!

By the way, while making Fodula, round, whole wheat bread is used and the inside is completely removed. These breadcrumbs are by no means wasted. We dry the breadcrumbs in the oven and turn them into flour, and we get breadcrumbs to use in the next recipe.

Materials of Fodula;

  • 1 whole wheat bread (round)
  • 3 tablespoons of oil
  • 1 onion (chopped)
  • 400 grams ground beef
  • 2 carrots (diced)
  • 1 cup of peas
  • Salt (1 teaspoon)
  • Fennel (1 teaspoon)
  • Anise (1 teaspoon)
  • 2 glasses of water
  • 2 tomatoes (peeled and chopped)

For the above:

  • 3 tablespoons of butter
  • 2 tablespoons of sage

Preparation of Fodula;

  • Fry the chopped onions in a pan.
  • Add the diced meat and fry until they release their water and add the carrots and peas.
  • Add salt, fennel, anise, water and diced tomatoes and cook until the water is gone.
  • Cut the top of the round whole wheat bread into a lid and remove the inside of the bread.
  • Fill this loaf with the diluted meat mixture and place on a baking tray lined with greaseproof paper.
  • Heat the butter in a small pan and add the sage.
  • Close the lid of the bread you put on the baking tray and apply sage oil on it.
  • You can serve it after cooking in the oven at 175 degrees for about 15 minutes. Enjoy your meal!
Small portion Fodula

While making the fodula dish, bake the remaining bread in the oven at 160 degrees for 15 minutes. You can use it this way as breadcrumbs. Also, the original Fodula dish is made with a single large loaf of bread. If you wish, you can also prepare small plates using small loaves.
